Pumpkin Spice season!! Recipe included!

One of the most wonderful things about fall is the arrival of Pumpkin Spice everything!!  I’m a huge fan, not only of the taste, but the promise that cooler temperatures are heading our way.  Before my restricted diet, I’d head over to Starbucks to grab my Pumpkin Spice Lattes.  SO good they were!  Every fall since, I’ve been a little sad that I’d be denied that classic fall drink.  Well, last year, one of my friends turned me on to a recipe that I adapted for my restrictions.  I’m not kidding that when I drank that first cup of homemade Pumpkin Spice Latte, I had tears in my eyes!  It was absolutely amazing!  So, my fellow restrictive dieters, here’s the recipe that I adapted for me.

Pumpkin Spice Latte

  • Fresh coffee or espresso
  • 1/2 cup almond milk (I use unsweetened)
  • 2 Tablespoons + of pureed pumpkin
  • 1 Teaspoon of Pumpkin Pie spice (Trader Joes has a great one!)
  • 1/2 Teaspoon vanilla extract (Again, I use unsweetened)
  • Honey to taste

Directions

Mix everything but the coffee together, heat and add to hot coffee.  If you want to get fancy, add a sprinkle of cinnamon on top. 🙂

Another great idea is to make it in bigger batches and keep in your refrigerator to have on hand. 

ANY recipe can be altered to accommodate your dietary restrictions, so just experiment!  Enjoy this “healthier” version of a super drink!   Now, if the weather was as accommodating…. THAT’D be great!!
