Ok, I’ve been on my super restricted diet for almost 8 years now. This whole time I’ve been missing mayonnaise. Oh sure, everyone told me I could make my own in a blender drizzling in the oil just right. It never worked for me and I ended up with a egg/oil mess in my blender. So, I just resigned myself to not having it. Really, what does an SCD person need to have mayonnaise for? It’s not like I can have sandwiches, right? That is indeed true, but there are so many other things to do with mayo than make sandwiches! One of my favorite things was a tuna fish salad sandwich. I’d eat it just as the salad on lettuce if I didn’t have bread. Yummy and good for you! It’s difficult to make without mayonnaise. Oh, I tried EVERYTHING else, like “Smashed Avocado” in place of mayo in recipes. Ukk! Didn’t like that at all! It didn’t look appetizing either.
Recently I ran across a recipe that I tweaked just a bit to better suit my tastes, and doggone it if it didn’t come out perfect! I was SO surprised!! Easiest recipe ever and I made it super fast. Immediately, I made myself a tuna salad, with the new mayo, green onions, and pickles. What a delight! Since I was so blown away, I thought I’d share the recipe with y’all.
(SCD) Easy Mayonnaise
- 1 cup extra light tasting olive oil (like Bertolli’s)
- 1/2 teas. Himalayan salt (or some other salt you prefer – you can check out my blog on different salts. )
- 2 teas. apple cider vinegar
- 1 egg right out of the refrigerator
The way to make it fool-proof is to make it in a wide-mouth pint jar with an immersion blender (stick blender). Add all the ingredients to the jar and wait a few seconds until the egg settles down at the bottom. Put in the blender and blend for 20 seconds. Don’t move the blender up and down until after the 20 seconds. That is when you’ll see it develop into mayonnaise and the movement at the end is just to incorporate the rest of the oil.
Voilà! It took me less than a minute to make. This is the most basic of all mayonnaise, but you could add whatever you like to make it more exciting. If you like Miracle Whip, you can add a little sweetener into the finished product. Or you can add garlic for aioli, pepper or cayenne if you want more of a kick. The possibilities are endless!
Mayonnaise is the starter of so many great recipes, and now, even restrictive dieters can enjoy this simple, quick way to make some! Enjoy!
