It’s true. Of all the things I’m not allowed, I miss toast the most. When my family makes their toast in the morning, the smell brings back wonderful memories of freshly buttered toast. There’s just something magical about the change bread goes through once toasted. Yum!
That being said, don’t feel badly for me. In the mornings, they may entice me with the smell of good bread toasting, but “I” entice them shortly afterward when I make my breakfast. 😉 Here’s my recipe for breakfast:
1 apple, peeled, cored, sliced, and cross-cut
5 or 6 pecans chopped
2 eggs
Honey
Coconut oil
Cinnamon
Melt the coconut oil in the pan, add cut apples and cover. While that cooks, I chop the pecans and get the eggs going. In another pan, I melt more coconut oil and drop the eggs in. I “scramble” them in the pan before they start cooking and leave them alone to jell. Adding the pecans to the apples, allows the pecan pieces to toast nicely. Then comes the honey and cinnamon. When my egg “disc” is cooked on one side, I flip it and turn off the heat. Cooking the apples in the honey longer will yield a wonderful caramel sauce. The egg disc goes on the plate and the apple concoction goes on top of that.
Guaranteed, the smell of that breakfast brings out the envy in all the toast-eaters around.
Sure, I can’t have toast, but the world is filled with all sorts of wonderful things I CAN have. It’s better to focus on the positive side of things in this world of negativity. (For those of you who are worried about my cholesterol count having eggs every morning, never fear! It’s perfect. ) 😉
